Preheat oven to 375 degrees F.
In medium bowl, place dried fruits and apple juice, stir to mix. Let sit about 5 minutes for fruit to soften; drain, reserving 1/4 cup juice. Open biscuits. On floured surface, roll a biscuit until about 5 inches in diameter. Spoon 1/8 of fruit mixture onto one half and sprinkle with nuts. Fold over and seal edges with fork; transfer to greased cookie sheet. Repeat with remaining biscuits.
In a small bowl, whisk egg white; add honey and reserved juice. Brush each biscuit with mixture and sprinkle 1 teaspoon sugar on each.
Bake for 15-17 minutes, or until golden brown. Remove from oven and cool for 5-10 minutes. Serve with extra fruit, if desired.
