Crisp and Colorful Quinoa Salad
Second Place in Just Tomatoes Recipe Contest 2008

INGREDIENTS

1-1/2 cups uncooked quinoa*
2 tsp. fresh lemon juice
1 tsp. sherry vinegar
1 tsp. extra virgin olive oil
1/2 tsp. sea salt
3/4 cups Just Apples
½ cup Just Raisins
1/3 cup chopped celery
1/3 cup crumbled bleu cheese
1/3 cup rough chopped pecans, toasted

 
PREPARATION

Prepare quinoa as directed on package. Remove from heat and fluff with a fork. Meanwhile, in a large serving bowl, whisk together lemon juice, vinegar, olive oil, lemon zest and salt. When quinoa is cool, add to bowl with remaining ingredients; toss to coat. Serve at room temperature or slightly chilled.

*Quinoa is available at major grocery stores in the grain section or health food area. It also can be found in natural food stores and health food stores.
