Recipe - Spicy Lime Prawn Tacos

Summer Berry Oatmeal Brulee

Try this exciting new twist on tacos! Itís quick and easy! The glazed BBQ prawns are delicate yet zesty, and our Just Mango adds a tropical sweetness to the slaw, while the Crunchy Corn & Tomato Salsa with our Organic Just Tomato Bits is refreshing, with just the right amount of zip. Itís a combination that will thrill your taste buds!

Organic Just Tomato Bits and Just Mango

Yield: Recipe Serves 4


INGREDIENTS:

8 Fresh Corn Tortillas
1/2 Cup Crumbled Cojita Cheese

Spicy BBQ Prawn Marinade:

3 Tablespoons Olive Oil
2 Tablespoons Honey
1/4 Teaspoon Ground Cayenne Pepper
3 Tablespoons Fresh Lime Juice
21-25 Medium-Sized Prawns or Shrimp (shells, veins and tails removed)

Combine ingredients in a quart-sized zip-lock bag and place in refrigerator. Then prepare the next two items.

Mango Slaw:

1/4 Cup Fresh Lime Juice
1/4 Cup Sour Cream
1/4 Cup Mayonnaise
Ground Pepper - To Taste
4 oz. Package Just Mango
10 oz. Bag of Shredded Cabbage (about 4 cups)

Combine first 4 ingredients and mix into a creamy sauce. Combine shredded cabbage and Just Mango. Cover and refrigerate.

Crunchy Corn & Tomato Salsa:

4 oz. Package Organic Just Tomato Bits
1 Cup Fresh or Thawed Frozen Corn
1 Diced Red Bell Pepper
1/4 Teaspoon Ground Cayenne Pepper
1/4 Cup Diced Red Onion
1/4 Cup Chopped Cilantro
1 Teaspoon Kosher Salt
1/4 Cup Fresh Lime Juice

Mix all ingredients together, cover and refrigerate.

Preparation/Assembly:

1. Skewer and BBQ the prawns.
2. Wrap the tortillas in a damp towel. Place on a plate and microwave for 45 seconds.
3. Build each taco starting with the Mango slaw, Crunchy Corn & Tomato Salsa, BBQ prawns, and Cojita cheese. Garnish with lime wedges.
